Selective manual harvest at the beginning of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 16 to 18 months in large French oak casks, with an additional month spent in stainless steel before bottling.
Ruby colour, with a complex nose showing blueberry, blackcurrant, cherry, violet, Mediterranean herbs and dried roses. Fine tannins and balanced acidity lead into a long dark-berry finish.
Sourced from a vineyard in the municipality of Castiglione di Sicilia. The vines – aged between 40 and 100 years – grow on stony and very fertile volcanic soil comprising a top layer of volcanic ash. They sit 700 to 750 metres above sea level and are gobelet-trained.
