Hand-picked and hand-selected grapes. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation with extended ageing on the fine lees to lend added complexity and creaminess. No filtering or fining.
Pale gold. Intense yet vibrant aromas of fully ripe apricot, peach and cherry dominate on the nose in addition to white pepper. Beautifully subtle sweet extract lends stimulating depth and pedigree. Perfect balance on a finish that never seems to end.
Steep slopes with a proportion of ungrafted vines growing on grey weathered Devonian slate soils that are rich in very coarse rhyolite and quartz porphyry.
