Hand-picked and hand-selected grapes. Gentle pressing followed by wild-yeast fermentation in stainless steel and wooden barrels. Maturation of 8 months on the fine lees lend added complexity and creaminess. No filtering or fining.
This Riesling Kabinett shows ripe yellow fruit, green apple, citrus and a touch of flinty minerality on the nose. Off-dry on the palate, with juicy acidity engaged in a fascinating push and pull with the residual sweetness. Persistent on the finish, with citrus and salty minerality.
From vines that grow on steep slopes consisting of the finest red and grey weathered Devonian slate soils.
