Selective manual harvest on various days at the beginning of October. Gentle pressing followed by sedimentation of the juice for 24 hours. Subsequent fermentation in temperature-controlled stainless steel, with wild-yeast fermentation of individual batches (based on the indigenous yeasts present on the grapes).
An intense, characterful Riesling with a pronounced nose of pome fruit. Complex on the palate – but also elegant, balanced and fresh, with a long finish.
The grapes for this Riesling come from different blocks in and around the village of Ruppertsberg, where weathered sandstone as well as sandy loam interspersed with loess are the predominant soil types.
