Selective manual harvest of ripe grapes only. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation for six to seven months on the fine lees. No filtering or fining.
Smoky mineral and white pepper aromas on the nose, born of grey Devonian slate. This wine's blisteringly aromatic minerality is reminiscent of iodine. A wonderful accompaniment to food.
