Technique

Viticulture

A single plot of vines for this cuvée from one of the best climates in the appellation, with an ideal exposure. Vines of very high quality Pinot grapes, 40 to 50 years old. Yields between 30 and 40hl/ha on average.

Oenology

Aged for 18 to 22 months in a very cool cellar, maximum 20% new wood. Bottled after filtration if necessary.

Suggestions for accompaniment

Roast pigeon - Bresse duck with cherries - Sautéed sweetbreads.
