The future of Cahors is here, in the bottles of Julien Ilbert, a young talented winegrower who helps you rediscover the malbec, which is called auxerrois here. With the Château cuvée, it is the origin and the terroir that are put forward, and which are expressed in a deep nose of menthol and dark chocolate. The wine is dense, fat, full-bodied, built on fine and soft tannins, of great class. The best ever made!

Technique

Viticulture

The estate has been in organic conversion since 2013, with the ECOCERT label. Surface area for this wine: 4.5 hectares. Number of bottles produced: 16 000. Origin of the grapes: Village of Cournou on the Causse (about 320 m altitude). Clay-limestone soil with a dominant of red clay. Average age of the vines: 40 years. Density of vines per hectare: 4500. Yields (hl/ha): 45.

Oenology

Vinification at low temperatures with a hot end of fermentation to extract the best of the Malbec fruit and coat the tannins as much as possible. The wine is aged for 12 months in old 500 litre French oak barrels.

Château Combel La Serre is located on the limestone plateau of Cahors, a great source of young talented winegrowers who are signing the revival of the AOC. It is a family property now managed by Julien and Sophie Ilbert, a couple of winemakers. The Ilberts have been on this land since the beginning of the 20th century. For a long time they took their grapes to the cooperative cellar, but things changed in 1998. It was then that the family took the plunge and decided to make their own wines. More recently, in 2013, they undertook and then succeeded in converting to organic farming and decided, since 2014, to favour parcel selections in order to create new cuvées. And it has to be said that the whole range is excellent, even the so-called thirsty wines!
