The future of Cahors is here, in the bottles of Julien Ilbert, a young talented winemaker who will make you rediscover the malbec, which is locally called auxerrois; and above all the race of its best terroirs of the causse. Here it is the fruit that comes to the fore, with notes of black cherry. The wine is full, rich but without any tannic hardness. It is easy to drink!

Viticulture

The estate has been in organic conversion since 2013, with the ECOCERT label. Surface area for this cuvée: 5 hectares. Number of bottles produced: 20 000. Origin of the grapes: Village of Cournou on the Causse (about 320 m altitude). Clay and limestone soil. Average age of the vines: 35 years. Density of vines per hectare: 4500. Yields (hl/ha): 50.

Oenology

Traditional short vinification at low temperature to extract a maximum of fruit. The wine is aged for 2 winters on fine lees in a cement tank. Quick bottling to preserve the fruit in the wine.

Suggestions for accompaniment

Duck breast with cherries - Pork belly glazed with red curry and soy - Lamb shoulder confit.

Domain
Château Combel La Serre is located on the limestone plateau of Cahors, a great source of young talented winegrowers who are signing the revival of the AOC. It is a family property now managed by Julien and Sophie Ilbert, a couple of winemakers. The Ilberts have been on this land since the beginning of the 20th century. For a long time they took their grapes to the cooperative cellar, but things changed in 1998. It was then that the family took the plunge and decided to make their own wines. More recently, in 2013, they undertook and then succeeded in converting to organic farming and decided, since 2014, to favour parcel selections in order to create new cuvées. And it has to be said that the whole range is excellent, even the so-called thirsty wines!
