Around 1975, Jean Vesselle decided to create a very natural cuvée, without adding any expedition liquor. At that time, only three Champagne growers made this type of champagne, including the Vesselle family, who called it Brut 100%. This new choice made it possible to obtain a champagne of aperitif style, aromatic, frank and sharp. And this is still the case. The Q/P ratio is noteworthy!

Clay and limestone soil. Average age of the vines is 30 years. Cordon de Royat for the Pinots and Chablis size for the Chardonnays.

Traditional champagne vinification. Aged on laths for about two years. Dosage of 0 to 2 gr according to the stakes.

Domain

After more than three centuries of Champagne tradition passed on from father to son, then to daughter, Delphine Vesselle continues with her husband David the work of her ancestors and more particularly that of her father, Jean. Her vineyard is composed of 15 hectares, divided between Bouzy, a village classified as Grand Cru and therefore of great renown, its surroundings, but also Loches-sur-Ource, opposite the famous Riceys, so that all her vintages are very famous for pinot noir. This is why 90% of the vineyard is planted with this grape variety and the rest with Chardonnay. The Vesselle family attaches great importance to the environment, by reinforcing the natural defences of the vine in order to limit treatments. Since 2000, they have been optimising the working of the soil and the use of grass to avoid using weedkillers. Her objective is to use renewable energies and that is why, in 2007, she installed photovoltaic panels and a rainwater recovery system. All her harvest is vinified, handled and marketed in Bouzy by her own care. The harvest in Champagne is necessarily manual; the grapes are immediately pressed in 2 pneumatic presses.
