Viticulture

Surface area: 15.11 ha. Average age of the vines: 33 years. Planting density: 7,200 vines per hectare. Clay-limestone soil, on the western plateau of Saint-Emilion, in the former parish of Saint-Martin de Mazerat. Double Guyot pruning. Two disbudding operations, three lifting operations. Leaf removal on the rising side, soil work under the row. Manual harvesting with sorting.

Oenology

Selection of plots. Destemming, manual sorting, vatting at controlled temperature. Alcoholic fermentation in 70hl truncated-cone vats. Vatting for an average of 28 days. Gentle and slow extraction. Maceration in an airtight place with immersion of the cap and the marc. Aged for 16 months, 65% in new barrels, the rest in vats, amphorae and 20hl tuns.
