This is a statutory wine: the nose is a basket of yellow and white flesh fruits, dominated by peach and exotic fruits. A few notes of vanilla and brioche add a touch of fatness. The richness of its palate unfolds in a long saraband of persistent aromas that will sublimate a filet of Saint-Pierre cooked on the skin. To be enjoyed within five to eight years.

Technique

Viticulture

Sandy-clay soils of La Janasse and La Crau. Surface area: 1.10 ha. The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weedkillers to maintain the aeration and flexibility of the soil. Yield: 25/30 hl/ha. Harvested in crates.

Oenology

Pneumatic pressing. The Grenache and Clairette are vinified in vats. The Roussannes are vinified in barrels. -The Grenache and Clairette are aged in vats for seven months, with stirring on the lees. The Roussannes are aged in barrels (80% of which are new) for seven months, with regular stirring of the lees.

Suggestions for accompaniment

Octopus salad with citrus fruits - Fresh or very lightly ripened sheep's cheese.
