  • Grape variety(ies): Ermitage. En France, on l’appelle Marsanne Blanche et on la retrouve beaucoup dans les Côtes-du-Rhône Nord ainsi que dans la moitié sud du pays. Elle est arrivée en Valais aux alentours de 1842 et s’est parfaitement acclimatée, par commodité les anciens l’ont appelée Ermitage ou Hermitage.

It is a wine with a lot of suppleness, volume and fatness, it interests us by its structure and its texture. There are also hints of almond and chestnut. The finish is marked by a slight bitterness and nuances that are more often found in spirits. With time, it can give off aromas of white truffle and raspberry liqueur and always benefits from a few years of ageing.

Viticulture

The Petite Arvine vines, which come from a selection of plots in the area known as "Les Seyes", are entirely planted on gneiss. The crystalline base of hard gneiss is covered by soils with a very low level of clay (>10%) and limestone (0 to 8%) and a very high level of sand and light, draining silts. The vineyard benefits from a continental climate with Mediterranean tendencies, with optimal sunshine, especially during the vegetative period. The Foehn effect favours a healthy state of the grapes at harvest time. Yield of 40 hl/ha.

Oenology

A confidential production, this cuvée was aged for 22 months in tuns (12 hl muids) and on the lees for 8 months. The wine was not subjected to malolactic fermentation.

Alexandre Delétraz is the story of an idealist from Geneva who moved to the Valais. In his own words: "La Cave des Amandiers is a bit of a utopia or rather a dream... A life project! It is the desire to create great wines in exceptional terroirs while respecting nature, to reveal the qualities of the Valaisan grape varieties in an authentic environment and to offer the wine the time to grow in the coolness of the cellar. The cellar is one of the youngest in the Valais, since it was created in 2008. After having vinified the first vintage in a mazot, then in a tractor garage in Fully, Alexandre found a more suitable place in the commune of Saillon. He moved into this new cellar in 2011 and although the vinification facilities are recent, the work remains totally artisanal. The vines are tended by hand because of the uneven topography, made up of small terraces that stretch from 450 to 900 metres above sea level over 5.2 hectares. This is an opportunity to remind ourselves that vine growing in the Valais is sometimes also mountain viticulture. This heroic viticulture is perfectly illustrated by the different entities that Alexandre owns in Fully: Les Seyes, Les Follatères, La Combe d'Enfer, Chanton d'Euloz, La Combe des Cloux.
