Neuchâtel Auvernier, Blanc flétri, Maison Carrée (50 cl) - 2021

This is one of the little-known treasures of the Neuchatel vineyards. Inspired by French straw wines, this rare flêtri white has a golden colour and a bouquet of honey and candied fruit. Its richness in the mouth is balanced by an excellent acidity which allows it to be enjoyed at the table with savoury dishes as well as desserts and even as a meditation wine!

Produced in the image of straw wines, this method of natural concentration is the most adapted to the Neuchatel climate

Oenology

The Chardonnay and Pinot Gris grapes are carefully arranged on racks to allow good ventilation between the bunches. They then rest in the attic of the house for 3 to 4 months. Thus, according to the winds and temperature variations from late autumn to the middle of winter, the berries will naturally and slowly lose the water they contain. The juice will concentrate: this is called "passerillage". Between mid-January and mid-February, these grapes are pressed. The concentration of the juice thus obtained prevents complete fermentation: the wine remains sweet. A sweet wine, aged for a year in oak barrels (228 l), it has the class of its renowned counterparts.

Suggestions for accompaniment

Ideal with pan-fried foie gras, blue cheeses, tarte Tatin or chocolate pie.

Long before the existence of civil registers, parish registers revealed the presence of the name Perrochet on the site of Auvernier. The family line can thus be traced back to the 16th century. From that time until the first half of the 20th century, the majority of the population lived off the vine and fishing. Since 2008, Jean-Denis and his wife Christine have taken over the running of the estate, assisted since 2015 by their son Alexandre. If their predecessors had to be satisfied with a very empirical knowledge, they have been able to benefit from the scientific evolution and perfect their knowledge in this field. Thanks to this biological knowledge, from the vine stock to the glass of wine, it is now possible for them to happily preserve their old vertical presses and their ancient cellar. This indisputable advantage allows them to obtain wines that are always typical of their terroir, in the true and long-standing family tradition.The Neuchâtel vineyards are located on the southern flank of the Jura. The vineyards of Neuchâtel are located on the southern slopes of the Jura mountains, shaped by the ancient Rhone glacier and stretching along the shores of Lake Neuchâtel.
