Viticulture

Single plot of Salquenen of 2533 m2 planted in 1982.

Oenology

From an average yield of 350 g/per vine (i.e. per m2). Cold maceration for 8-10 days and vatting for 10 days with whole bunches. Aged in fine-grained stave casks from the Centre of France, of which 100% are new 600l casks, for 12 months. Bottling after 14 months without fining, with very light filtration and following the lunar calendar to respect the wine.
