From the limestone parcels of Corin and Sierre, this Pinot is refined and sensual. Since 2016, it has been vinified with an increasingly high percentage of whole, unstemmed grapes, which gives it greater density and complexity. Technique

Viticulture

Vines located in Corin at Bretton and in Miège. From an average yield of 450 gr/per vine (i.e. per m2).

Oenology

Aged in fine-grained stave casks from central France, 80% of which are new, for 12 months. Little So2 due to the cold cellar ageing and in order to respect the nature of the fruit and to reduce the wood intake. Bottled after 14 months without fining, with very light filtration and following the lunar calendar to respect the organoleptic qualities of the wine.

Suggestions for accompaniment

Tajine of pigeon, cherry and pistachios - Quasi of veal and gratin of chard - Roasted farmhouse poultry.
