Porrera's great Carignan wines are renowned in the most discerning circles of wine connoisseurs. Celler Vall Llach has the privilege of owning vineyards with extraordinary Carignan vines, allowing us to present this wine from the village of Porrera as one of the jewels in the winery's crown. Old Carignan vines, carefully selected from vines over a hundred years old and then blended with an average of 15% Grenache.
Oenology
Fermentation of the destemmed grapes in 300 and 500 litre stainless steel vats. 17 days of fermentation at a limited temperature between 25 and 29ºC with daily punching down and gentle pumping over. 12 days of post-fermentation maceration, followed by gentle pressing. Malolactic fermentation, 100% in stainless steel vats. The wine was transferred to 300-litre barrels of fine-grained new French oak, lightly toasted and medium toasted, and 2nd-year foudre. A racking is carried out during the 10-month ageing period.
