Cavesa le CAVE, le club des amateurs de vins exquis

Riesling Saar, Van Volxem (magnum) - 2021

Produced by a great (literally and figuratively!) star winemaker of the Saar, this wine displays a straightforward, uncompromising character of the grape variety and the dizzying local schist terroirs. Very pretty notes of dried fruit, honey and flowers on the nose, with a prominent mineral background. The palate is driven by a noble bitterness and traces wonderfully, calling for fine food.

Viticulture

The estate is located in Mosel-Saar-Ruwer, more precisely on the banks of the Saar in the village of Wiltingen. It was bought by the current owner, Roman Niewodniczanski, in 2000. The vines for this vintage are at least 30 years old and are situated on slopes with various Devonian schist soils, with mixtures of rhyolite, porphyry and quartz of volcanic origin.

Suggestions for accompaniment

Aperitif - Shrimps with saffron and basmati rice - Sashimi - Asparagus with morels.

Rediscovered and developed by monks in the 11th century, it was cultivated from the 16th century onwards by the Jesuit Order, then transformed into a wine-growing monastery in 1743. During the French Revolution, the ecclesiastical lands were secularised. During the French Revolution, the ecclesiastical lands were secularised and the Brussels brewer, Gustav Van Volxem, became the owner. This visionary was quick to recognise the potential of the vineyard, which was very well situated on the Saar, and succeeded in making it one of the most renowned in the Prussian Empire. The rise of the region's wines triggered the golden age of the winery, whose "nectars" appeared on many prestigious wine lists around the world. After four generations of the Van Volxem family, the estate was bought by Roman Niewodniczanski in 2000. The property was then renovated and the vineyard enlarged thanks to the acquisition of many prestigious plots. Dominik Völk, who has been managing director since 2004, is trying to revive the rich past and is aiming for an international...
