St-Joseph, Cuvée du Papy, Dom. du Monteillet (magnum) - 2021

With his Cuvée du Papy, Stéphane Montez presents a Saint-Joseph with many arguments to make Côte-Rôtie located a few yards away tremble: a deep nose of pepper and citrus fruits typical of this cuvée, expressing itself with aeration in a very spicy register; the wine is juicy, precise, long, with a reserved finish which is the characteristic of great reds for ageing.

Viticulture

Cuvée du Papy has been produced since the 1989 vintage, when Antoine (Stéphane's father) became a grandfather. He chose his best slopes, his best vines (over 30 years old) and his best grapes, selected his best barrels and put all his love and know-how into making an exceptional cuvée. The latter is made from old Syrah vines on granite soil.

Oenology

De-stemming, cold maceration for 1 week, punching down and pumping over of the juice twice a day for 3 to 4 weeks, long and progressive fermentation, pneumatic pressing at low pressure to avoid bursting the pips. Aged for 2 years in new French oak demi-muids (50%).

Suggestions for accompaniment

Roasted monkfish in red wine, crushed charlottes with cébettes - Sliced lamb, cream of split peas with cumin - Mignon de cerf.
