  • Grape variety(ies): Durize - vieux cépage presque abandonné, la Durize subsiste encore dans la région de Fully (environ 7000 m2). Elle est issue du croisement entre le Roussin (lui-même fils du Cornalin du Valais, appelé aussi Rouge du Pays) et un cépage inconnu (aujourd’hui sans doute disparu) et fait partie de la famille des Oriou. Elle a donc des affinités avec de nombreux cépages valdôtains dont l’Humagne Rouge.

Cherry colour, slightly purplish. First nose of moss, stone and pepper. Then citrus fruit, iris bulb and finally red and black berries. The palate is stylish, slender and airy. The body is full-bodied yet light, and the finish combines tannins that are not too tight but still present with a fresh, fruity aroma and hints of green peel.

Viticulture

This Durize comes from a parcel in the hills above Fully in the direction of Branson. The soil is crystalline with a fair amount of gneiss. The vines are quite old and are the result of sugaring an old parcel of Chasselas several years ago.

Oenology

The harvest took place on 19 October and measured 80°Oe. Fermentation took place in stainless steel vats with the grapes completely destemmed. After a month's maceration, the wine is devatted and then filled into an egg-shaped stoneware jar. The remainder of the wine is matured in stainless steel tanks. Malolactic fermentation takes place the following summer. Maturation continued for a second winter in a used feuillette (4th passage), then the wine was massed in mid-April 2023. It was bottled unfiltered on 10 July 2023.

Suggestions for accompaniment

Roast veal with mushrooms, pork filet mignon, rare tuna steak, polenta and courgette cakes.
