Vouvray Le Clos, Vincent Carême - 2021

Le Clos is one of Vouvray's greatest terroirs. Vincent Carême decided to vinify it on his own in order to make the most of it. The wine is powerful, aromatic, almost exotic in flavour, and rich and fleshy on the palate, with a full-bodied texture but a taut finish. A magnificent gastronomic and terroir wine!

Technique

Viticulture

Tania and Vincent set up their estate in 1999. Their philosophy is simple: focus on growing vines to produce the best grapes possible. Today, the total surface area is around 15 hectares. In the vineyard, the team works mechanically under the rows with natural grass cover. The terroir Le Clos is planted with vines around 60 years old, on clay-limestone soil.

Oenology

Hand-picked. Low yield of 20hl/ha. Vinification in barrels, 20% new wood. Aged for 18 months in 400-litre demi-muids.

Suggestions for accompaniment

Vichyssoise glacé with Bouchot mussels - Sole meunière - Soya tuna. Duck foie gras.
